Scampi Recipe

Yes, it's still morning here on the Eastern Seaboard of the United States... but what else should follow a striper post, but a post about cooking same :)

Seafood Scampi Over Angel Hair Pasta
Yield: 4 Servings

Ingredients1 lb medium fresh striper, or scallops, or shrimp-unpeeled (you can mix)
8 oz angel hair pasta; uncooked
1/2 c butter or margarine
4 cloves garlic; minced
1/3 c dry white wine
1/4 ts freshly ground pepper
3/4 c grated Romano cheese
1 tb fresh parsley; chopped

Instructions

If using shrimp, peel and devein, if desired; set aside. Cook pasta according to
package directions; drain. Place on a large serving platter; and set aside. Melt
butter in a large skillet over medium heat. Add garlic and seafood, and cook,
stirring constantly, 3 to 5 minutes or until seafood turns pink; add wine and pepper.

Bring to a boil; cook 30 seconds, stirring constantly. Pour seafood mixture over
pasta; sprinkle with cheese and parsley and toss gently. Serve immediately.
